Last month I had a slight soreness in my penis and one day saw that all the skin on my penis head has started to peel away, the skin around was also chapped and sore. I used canisten assuming this was thrush and it cleared within a week. Three days ago I started feeling the same unusual soreness. Today I have noticed loads of white spots, and a little area where skin is peeling, again the skin around tip is dry and chapped. I have kept my personal hygiene up, could this be thrush again? I have only ever had one sexual partner who has also only ever had one myself!

Yes, from the way you explained your symptoms it mostly points towards penile thrush ( candidiasis ). It is surprising that it recurred again because normally after treatment with canesten cream, it does not recur. You also started applying the cream immediately, so it did not flare up. However it has started again. It can recur in people who are taking long time corticosteroids, or in uncontrolled diabetics, or even in people who have recently taken antibiotics.
Have you checked your blood sugar value recently ? If yes, can you mention the values in your follow up query.
Also are you active sexually? Does your partner have any history of candidiasis infection ?
Have you taken any antibiotics recently?
I will advise you to take Tab. Fluconazole 150 mg ( Diflucan ), one single dose and you can expect recovery within 7 days. Keep the area clean, make sure your underwear is loose, as tight fitting underwear can make the area moist and more prone for yeast infection.

Yes I am on coamoxiclav. What would the white spots be I didn't see those last time is that a symptom of thrush. I'm not sure on blood sugars, but I will test thanks. My partner has had thrush but not recently.

It seems to be an yeast infection, as i pointed out before, but i also notice your penile skin seems to be dry. Again it can be secondary to yeast infection, or also can be due to excessive sex without lubrication, or sue to dermatitis. Make sure you don't put any soap in your glans area and the penile shaft, because they can be overtly sensitized to the soap. Just clean the area with water.
Since you're on antibiotics, it could have possibly initiated your thrush again. So i will recommend you take Tab. Fluconazole as soon as possible, only one dose is enough and you can expect recovery in 3-4 days. If it doesn't within 10 days, it is better to consult a dermatologist. Abstain from any intercourse till you completely recover. I will also recommend you to get your sugar test done and upload the report once it is ready.
