Resolved question:
In the last ~3.5 years I have had a number of health issues. I am concerned that I may have an autoimmune issue or pancreatic cancer. I have seen a number of doctors and have gotten opinions that contradict each other. This has cost me a large sum of money in medical cost. As such, I am hoping a group consensus will be more helpful. I have included a detailed medical history with some lab results attached.

I have gone through your medical history and the attached lab reports.
To answer your specific queries – NO, there are no features suggestive of Pancreatic Cancer or Autoimmune disease.
I assume that you do not have any of the major symptoms like severe nausea and vomiting, weight loss (you have already mentioned) , joint pains , skin symptoms or eye symptoms.
The bowel symptoms you had three years before is more likely to from an infectious variant of Inflammatory Bowel syndrome which has spontaneously resolved. The rise in blood pressure is mostly due to essential hypertension and there is nothing to worry about it (as the ECG and stress tests were normal). The spike of blood sugar following mean, again is a normal phenomenon and there is nothing to worry about it. It is possible that there is a mild form of alimentary glycosuria.
Since you have clay coloured stool and occasional diarrhea you might be considering fat malabsorption / obstructive jaundice. But let me assure you these are mere no specific findings .
There are no characteristic features for autoimmune diseases either. But I suggest a simple blood tests called ANA (Anti nuclear antibodies ) just to be sure (if not done within in 1 year).
Other blood tests you have mentioned here are within normal. So there is no cause for concern regarding that.
PS : I do not see any indication for baby aspirin. Please discuss with your Doctor whether you need it at all. This can increase the risk of stomach bleeding and other GI symptoms.

1) I do have very itchy skin at times and urinate a lot
2) what about my toe going numb with pain-still is numb more than two months later. My hands go numb at night at night or when I lean back on my arms/shoulder?

Frequent skin, occasional itchiness and numbeness (and as a matter of fact few of the symptoms you have mentioned) are non specific. By non specific I do not mean to say they are not significant, but rather they do no point towards a single specific diagnostic possibility.
So unless these symptoms form a pattern (for example a persisting radiating pain down the back of leg + toe numbness) or are associated with warning signs, these can be considered non specific. There is no reason to be worried about these symptoms. The cause is probably a minor nerve irritation or neuropathy which can be considered as a normal part of human body functioning.
