HI I had unprotected sex with my girlfriend however I did not come inside of her.
However, after 2 days she fainted and said shes not feeling well. Her period is not yet due.
Can someone experience the early signs of pregnancy within 2 days of having sex.
She also has a history of hyperventilation and iron deficiency.

I understand your concern.
It is not possible to start manifesting symptoms within 2 days even if pregnancy occured. Since she has a histroy of anemia, anemia could have possibly contributed to her fainting.
Also since there was no ejaculation inside her, it rules out the possibility of pregnancy too.
When was her LMP? And when did you have intercourse with her?
