Hello, I am a 28 year old male. About two years old patientago I had unprotected sex with a female of unknown HIV status. I have an HIV test coming up next month and have began to worry. This was the only time I've had unprotected sex with anyone. Duration was a couple hrs if that matters. I'm wondering what the chances of HIV infection are? Should I be so worried?

I understand your concern.
It is very difficult to predict, because if she was in fact HIV postitive, then she could have possibly transmitted it onto you. However, the good thing one such exposure has very low chances of spreading HIV. Also it's been 2 years, and if you were infact infected, you would have started manifesting some symptoms by now, such as unexplained fever, lymph node enlargement, myalgia ( e.t.c )
So in my opinion, in absence of any decline in your general health and absence of other symptoms that i mentioned, you should not be worried.

Are the symptoms temporary or do they happen off and on? Are they very severe? could I be in a latency stage? I have had two canker sores. Besides for my obvious paranoia, I am in great shape and health. I really appreciate your help.

The symptoms can be very varied, but when it does occur it tends to be more severe than what is expected in normal people.
Canker sores can be secondary to other causes such as spicy food, bites, and vitamin deficiency.
Please do not be so worried, you're in great health and that rules out chances of HIV.
It is highly unlikely anyway from one such exposure.
